Large-scale processing
has reduced the production costs of most manufactured foodsuffs: in 1911 most
sausages were still made by hand using small-scale mincing and filling
machines. The meat content of today’s sausages is almost certainly higher
than that of the equivalent product in 1911, so they are not only relatively
cheaper, but also better quality.
