In 1911, bacon was
regarded as an inexpensive meat that was easily afforded by poorer people.
This was partly because the curing process meant that it could be more
easily stored than fresh meats. Relatively
speaking bacon is considerably more expensive today than it was in 1911,
partly because it has lost its status as a basic foodstuff, but mainly because
whereas in the past the whole of the pig was saleable, the taste today is for
the more expensive cuts, and cheap cuts of bacon are unsaleable, so that the
price of premium cuts like back bacon reflects the cost of parts of the pig
that can only be used for processed products.
The 2001 comparison is with pre-packed back bacon: Economy back bacon
is considerably cheaper, at £2.09 per lb.
